Whole Wheat Wraps with Smoked Turkey and Roasted Pepper

Serves 2

1 red bell pepper
2 tablespoons lowfat mayonnaise
1 tablespoon capers, drained and chopped
2 teaspoons Dijon mustard
4 slices roasted turkey breast
4 slices Havarti cheese
2 medium whole-wheat tortillas, about 6 inches across
1 cup mixed baby greens

Preheat the broiler. Place red pepper on a rimmed baking sheet on its side. Place under the broiler about three inches from the top element. Broil for 3 to 5 minutes per side until the skin blackens and bubbles. Remove from the oven and place in a paper bag to steam for 15 minutes. Once cool, remove from the bag and peel blackened skin from the pepper. Remove the seeds and slice into thin strips.

Mix mayonnaise, capers, and Dijon in a small bowl. Divide mayonnaise among tortillas and spread with the back of a spoon. Lay two slices of turkey on top of the mayonnaise, a slice of cheese, and then the roasted red pepper strips. Top with greens and roll up.
