Bagels with Homemade Gravlax

Serves 8

1/3 cup Kosher salt
1/3 cup sugar
1 tablespoon crushed black peppercorns
1 pound salmon filet, skin and pin bones removed
4 medium whole wheat bagels
1/2 cup low fat cream cheese
8 thin slices tomato
3 tablespoons capers, drained
8 very thin slices red onion

In a medium bowl mix together salt, sugar, and peppercorns. Sprinkle 1/3 rd of mixture in bottom of resealable plastic container. Place salmon filet on top, and cover salmon with remaining salt mixture. Cover and refrigerate 24 hours.

Rinse salmon and pat dry with paper towels. Using a long, sharp knife, slice salmon as thinly as possible.

Cut bagels in half and spread each half with 1 tablespoon cream cheese. Top with three slices salmon. Reserve extra salmon for another use. Top with tomato slices, capers, and onion. Serve immediately.
